
INGREDIENTS
- Big potatoes
- salt
- paprika
- ketchup
- oil,enough for frying
METHOD
- Peel the potatoes then wash them.
- Cut the potatoes into long thin strips.
- Soak the potatoes in cold water for 2-3 hours.(you can soak them overnight if you wish). This removes excess potato starch ,which prevents fries from sticking together and helps achieve maximum crispness.
- Drain the water and pat dry the potatoes.
- Heat enough oil in a pan.
- When the oil is ready(drop a small piece of potato to confirm) ,fry the potatoes until tender but not browned,3-5 minutes(do this in small batches avoiding overcrowding the pan).
- Drain excess oil from the fries on paper towel and let them cool.
- Once cooled,fry the potatoes again( in small batches while avoiding overcrowding the pan) until golden and crispy.
- Once again drains excess oil on paper towel and toss with salt and paprika or any other seasoning of choice.
- Serve hot with ketchup or any sauce or dip of choice.
