FRENCH FRIES,FRIES,CHIPS,NJIVA RECIPE

INGREDIENTS

  • Big potatoes
  • salt
  • paprika
  • ketchup
  • oil,enough for frying

METHOD

  1. Peel the potatoes then wash them.
  2. Cut the potatoes into long thin strips.
  3. Soak the potatoes in cold water for 2-3 hours.(you can soak them overnight if you wish). This removes excess potato starch ,which prevents fries from sticking together and helps achieve maximum crispness.
  4. Drain the water and pat dry the potatoes.
  5. Heat enough oil in a pan.
  6. When the oil is ready(drop a small piece of potato to confirm) ,fry the potatoes until tender but not browned,3-5 minutes(do this in small batches avoiding overcrowding the pan).
  7. Drain excess oil from the fries on paper towel and let them cool.
  8. Once cooled,fry the potatoes again( in small batches while avoiding overcrowding the pan) until golden and crispy.
  9. Once again drains excess oil on paper towel and toss with salt and paprika or any other seasoning of choice.
  10. Serve hot with ketchup or any sauce or dip of choice.
