
INGREDIENTS
- 1 egg
- 21/2 cups flour
- 5 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp cinnamon powder
- 1/2 tsp ginger powder
- 1 pinch of salt
- 2 tbsp margarine/ butter
- enough oil for frying
Method
- In a bowl ,mix the flour, salt,sugar,cinnamon,baking powder and ginger well.
- Rub the margarine/butter in the flour mixture.
- In a separate bowl,beat the egg and milk.
- Create a well in the flour mixture then pour in the egg+milk
- Knead till the dough is soft and no longer sticky on your hands and surface(you can add some flour in the process if it’s still sticky)
- Once the dough is done,cover the bowl with a dry clothe and leave it to rest for about 40-50minutes.(place it in a warm place for better results ,I put mine in the microwave for 2 minutes then let it rest for 40 minutes)
- Roll out the dough on a surface covered with flour till about 1cm thick for fleshy mandazi
- . With a cookie cutter,cup or knife,shape your mandazi to your desired shapes.
- Heat your oil in a pan (you can deep a small piece of dough to see whether it’s hot enough, if it raises to the surface immediately then it’s good to go)
- Fry your mandazi till golden brown on one side then turn them to cook the other side till golden brown.
- Drain the excess oil using a paper towel.
- Enjoy your mandazi with a hot cup of coffee/tea/chocolate.
